Role Overview

The Chef de Partie will combine strong day-to-day kitchen production with clear ownership of key service periods. The role focuses on maintaining consistency, standards, and guest satisfaction within a distinctive heritage setting, delivering traditional English cuisine.

Key Responsibilities

• Support day-to-day kitchen production, ensuring quality, speed, and consistency
• Take a lead role in breakfast service, managing:
  • Organisation and mise en place
  • Timing and service flow
  • Food standards and presentation
• Own and deliver Sunday lunch service, maintaining the reputation of an established, popular offering
• Ensure all food is prepared to specification, with accurate portioning and garnish standards
• Maintain hygiene and cleanliness in line with relevant regulations (including HACCP standards where applicable)
• Assist with stock control, rotation, and basic ordering requirements to minimise waste
• Work effectively with the wider brigade to support service periods and daily prep plans

What We're Looking For

• Proven experience as a Chef de Partie or similar role
• Strong experience in breakfast service and/or high-volume, timed production
• Confidence in delivering consistent Sunday lunch service
• Ability to work to standards, maintain quality under pressure, and manage timings
• A passion for traditional English cuisine and an interest in heritage dining experiences
• Strong communication, reliability, and teamwork
