Job Title: Head Chef - Korena Cuisine

We are searching for an experienced Head Chef with expertise in Korean cuisine to lead the kitchen of a new restaurant concept in Malta. This role offers a unique opportunity to bring the rich traditions and bold flavors of Korea to life while managing a talented culinary team and delivering an exceptional dining experience.

The Head Chef will be responsible for the full management of the Korean kitchen, from menu development and ingredient sourcing to team training and service excellence. The successful candidate will combine authentic knowledge of Korean culinary traditions with creativity, operational leadership, and a passion for hospitality.

Key Responsibilities

• Design and execute menus showcasing the depth of Korean cuisine, from traditional dishes to modern interpretations
• Lead and manage all kitchen operations, including prep, live service, and administration
• Recruit, train, and develop kitchen staff, instilling discipline, efficiency, and teamwork
• Maintain consistency in flavor, presentation, and portioning across all dishes
• Manage stock levels, supplier relations, and procurement of specialty ingredients
• Control kitchen costs, monitor food waste, and ensure operational efficiency
• Implement and oversee HACCP procedures, hygiene standards, and food safety practices
• Work with management on seasonal menus, promotions, and special events
• Ensure a high level of guest satisfaction through quality, innovation, and timely service

Candidate Profile

• Minimum of 3–5 years in a senior kitchen role (Head Chef or Sous Chef) with a focus on Korean cuisine
• Proven expertise in traditional Korean dishes such as kimchi, bulgogi, bibimbap, stews, and barbecue, as well as modern adaptations
• Culinary degree or professional training preferred
• Experience in high-volume restaurants, fine dining, or luxury hospitality
• Strong leadership, organizational, and communication skills
• Financial awareness, including menu costing and budget management
• Passion for maintaining authenticity while introducing creative flair
• Based in Malta or open to relocation
