We are currently seeking a Junior Sous Chef on behalf of a prestigious client based in Darlington. Set within expansive countryside grounds, our client offers a unique and rewarding working environment for hospitality professionals.

The Role:

As Junior Sous Chef, you will play a key role in leading a dynamic kitchen brigade, ensuring the highest standards of food preparation, presentation, and hygiene. Your responsibilities will include (but are not limited to):

  • Leading and mentoring a team of chefs across designated sections

  • Ensuring all food is prepared to an exceptional standard, meeting quality and presentation expectations

  • Supporting cost control and profitability targets through effective stock and portion management

  • Building relationships with suppliers to ensure consistent product quality and pricing

  • Overseeing deliveries and stock rotation, ensuring health and safety compliance

  • Assisting with rota planning to ensure staffing levels match business needs

  • Contributing to menu development and innovation, with clear documentation and training materials

  • Delivering cook-offs and training sessions for both kitchen and front-of-house teams

What We’re Looking For:

  • Experience working in a fast-paced, high-volume kitchen, with a focus on consistency and attention to detail
  • Knowledge of seasonal produce and modern culinary techniques
  • Experience with menu planning, costing, and stock control
  • Exposure to health, safety, and food hygiene regulations, with ideally a Level 2 or 3 Food Hygiene Certificate
  • Experience training or mentoring junior team members
